French Grated Carrot Salad (David Lebovitz)

Maybe you want to bring some form of veggie but need it to travel/keep well. Nothing beats a basic French grated carrot salad! I don’t use a recipe, but this one looks great. A box grater or cuisinart works. I like to add dried currents. Chopped herbs, pistachios or hazelnuts if you feel fancy.
